When you start the stunt course only the first track, Warehouse, is unlocked. To unlock the next tracks you need to complete the subsequent course.

To unlock all the cars in circuit racing you need to get an A ranking in every level.

At the main menu, hold L and then push X, A, A, UP, DOWN, UP, DOWN.
